Guest guest Posted October 19, 2001 Report Share Posted October 19, 2001 Greetings- I am a newcomer to this list, delighted to find some vegetarian inspiration for using my crockpot. I have been vegetarian on and since high school. I finally decided to keep meat out of the house about 5 years ago when I wanted to start keeping kosher. I've never liked meat much anyway, so it wasn't a difficult decision, especially compared with the prospect of two sets of dishes and cookware to keep meat and dairy separate. We do eat fish from time to time, but I looked through the archives and saw that that was a sore spot, so this will be my last mention of it, I promise :-) I have a couple of tried-and-true crockpot recipes (which I will share later, assuming you folks actually need another recipe for chili or white bean soup), but I don't use it as much as I'd like. I am an inordinately busy homeschooling mom with two part time jobs, so the appeal of the crockpot is strong. I just need to find recipes which are tasty, simple, and don't rely too heavily on super-processed foods. I am about to try out the Indian pudding as a treat for my early-rising husband.
