Title: Crockpot-roasted veggies and tofu

1 sm Butternut or acorn squash, seeded, in 2 " wedges

12 Baby carrots -- peeled

3 Baby eggplants with peel, halved lengthwise

12 White onions, peeled

6 Plum tomatoes, stemmed

2 Tbs Olive oil

3 Tbs Fresh flat-leaf parsley, chopped

1 Tbs Fresh thyme leaves (or 1 tsp. dried)

1/4 ts Crushed red pepper

Salt (optional)

Black pepper

1/2 lb Mustard greens, spinach or Swiss chard

2 oz Parmesan cheese -- grated or shaved

1/4 c Fresh basil leaves -- chopped

1 lb Firm or extra-firm tofu, diced

Arrange squash, carrots, eggplants, onions and

tomatoes in a 3 1/2-quart or larger crockpot. Drizzle

with olive oil; sprinkle with herbs, red pepper, salt

and pepper. Cover and cook on LOW for 7 to 8

hours or on HIGH for 3-1/2 to 4 hours.

 

Meanwhile, wash greens and remove any tough

stems. If cooking on LOW, change setting to HIGH;

add greens and tofu to crockpot and continue to

cook, covered, until greens wilt, about 5 minutes.

 

To serve, spoon vegetables, tofu and broth into

individual wide, shallow soup bowls. Top each

serving with Parmesan and sprinkle with basil.

Title: Ginger ale or 7Up applesauce (crockpot)

Keywords: side dishes, dessert

 

Cooking apples, peeled, cored and cut into chunks--

enough to fill a 3 1/2- to 6-cup crockpot

1 can non-diet ginger ale or lemon-lime soda

Cinnamon and brown sugar -- optional

 

Simply place the apples in the crockpot and pour

in the soda. If you like, add cinnamon to taste.

Add brown sugar for a sweeter sauce. Cook on low

all day. Enjoy warm or cold; freezes well.

 

Note: No matter how many apples are in the crockpot,

add only the one can of soda.
