Guest guest Posted September 20, 2001 Report Share Posted September 20, 2001 Zucchini Bread Recipe By: Crockery Kitchen Categories: Bread 2 eggs 2/3 cup vegetable oil 1 1/3 cups zucchini -- peeled and grated 2 teaspoons vanilla 2 cups flour 1/4 teaspoon salt 1/2 teaspoon baking powder 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 cup chopped nuts -- (up to 1) In a mixer bowl, beat the eggs until light. Mix in the oil, sugar, zucchini and vanilla. Stir in dry ingredients and nuts. Pour into a greased and floured 2 pound coffee can. Cover with paper towels.
