Barley-Pine Nut Casserole

Amount Measure Ingredient -- Preparation Method

1 cup uncooked pearl barley

1 1/2 cups V-8® vegetable juice

1/2 teaspoon salt

1/4 teaspoon pepper

2 stalks celery -- sliced (1 cup)

1 medium bell pepper -- chopped (1 cup)

1 medium onion -- chopped (1/2 cup)

1 14.5 oz can vegetable broth

4 medium green onions -- sliced (1/4 cup)

1/4 cup pine nuts -- toasted*

 

Mix all ingredients except green onions and nuts in a 3 1/2 to 6 quart slow

cooker.

 

Cover and cook on low heat for 6 to 8 hours or until barley is tender.

 

Stir in green onions and nuts.

NOTES : *To toast pine nutes, bake uncovered in an ungreased shallow pan in a

350ºF oven about 10 minutes, stirring occasionally, until golden brown. Or cook

in an ungreased heavy skillet over medium-low heat for 5-7 minutes, stirring

frequently until browning begins, then stirring constantly, until golden brown.
