Very Adult Rice Pudding

Amount Measure Ingredient -- Preparation Method

1 13 oz can evaporated milk

2 tablespoons brown sugar

3 tablespoons butter -- melted

1 teaspoon vanilla

1 egg -- lightly beaten

1 teaspoon lemon juice

1/2 cup dried cranberries or cherries

2 cups cooked rice -- 1/4 " dice

1/4 teaspoon cinnamon

Grand Marnier, Amaretto, or dark rum

whipped cream

 

In a bowl, combine milk, sugar, butter, vanilla, egg, lemon juice, and

cranberries, mixing well.

 

Place rice in prepared slow cooker insert. Pour milk mixture over rice and

sprinkle with cinnamon.

 

Cover and cook on high for 2 hours (do NOT cook for a longer time on low) or

until top is set and a toothpick inserted in the center of the pudding comes out

clean. Spoon into serving bowls and drizzle with Grand Marnier and a dollop of

whipped cream.
