Vegetarian Meal Tips

 

Summer eating usually is light and full of produce. This may be a good time to

try some vegetarian meals.

 

For good protein sources try beans, nuts or seeds. Add any of them to salads,

steamed veggies or pasta for quick cool meals. Canned beans make summertime

cooking easy and cool. If you worry about salt, season with something else.

Grain dishes also provide cool, protein-rich options. Try tabbouleh salad with

low-fat shredded cheese, couscous with vegetables and tofu, or rice seasoned

with veggies and nuts. Stuffing vegetables with grains is another option. Baked

squash with barley or rice or even cabbage stuffed with pasta.

 

Look for easy, light vegetables to combine with cool proteins for fast meals

that end when the sweet fresh fruit is served
