In a 2-cup glass measure or bowl, combine orange juice, honey, butter, ginger, and orange zest. Pour over carrots. Cover and cook, stirring once, on low for 6 to 8 hours or on high for 3 to 4 hours, until carrots are nicely glazed. Serve sprinkled with parsley and seasoned to taste with salt & pepper.
