Guest guest Posted July 2, 2001 Report Share Posted July 2, 2001 * Exported from MasterCook * Caramelized Onion and Apple Bake Recipe By :America's Best Slow Cooker Recipes, Donna-Marie Pye Serving Size : 6 Preparation Time :0:00 Categories : America's Best Slow Cooker Rec Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons butter or margarine 4 large onions -- sliced 1 tablespoon granulated sugar 8 ounces sliced mushrooms 1 Granny Smith apple -- peeled, cored & finely chopped 2 tablespoons all-purpose flour 3/4 cup vegetable stock 1/4 cup light cream cheese -- softened 2 tablespoons dry sherry 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup toasted sliced almonds -- see note 1/4 teaspoon paprika In a large skillet, melt butter over medium heat. Add onions and sugar. Cover and cook, stirring occasionally, 12 to 15 minutes or until onions are softened and nicely colored. With a slotted spoon, remove from skillet and set aside. To same skillet, add mushrooms and apple and an additional tablespoon of butter if necessary. Cook stirring, for 6 to 8 minutes or until mushrooms have softened and released their liquid. Blend in flour and then stock. Bring mixture to a boil and cook, stirring constantly, until slightly thickened. Stir in cream cheese until melted. Remove from heat. Stir in sherry, salt, pepper, and reserved onions. Transfer onion mixture to prepared slow cooker and sprinkle with toasted almonds and paprika. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until set and heated through. S(MC-Formatted by:): " Karen C.
