Guest guest Posted June 26, 2001 Report Share Posted June 26, 2001 Armenian Lentil Soup 1 c chopped onion 1/2 c sliced carrots 1/2 c sliced celery 3 c peeled, cubed eggplant 1 c diced green pepper 3-6 cloves garlic, minced 6 c stock 1 1/2 c lentils 1 1/2 c chopped tomato 4 oz dried apricots, sliced 1/4 t cinnamon 1/4 t allspice 1/4 t cayenne 1 T paprika 1 1/2 t salt 3 T parsley 1 T mint Saute onion, carrots, celery, eggplant, green pepper and garlic in olive oil until lightly browned. Add stock, lentils, tomato, apricots, cinnamon, allspice, cayenne, paprika and salt. Simmer until lentils are tender. Add parsley and mint. Adjust seasonings to your taste.
