Squash Casserole (Fix-It and Forget-It)

 

Recipe By :Adapted From Fix-It and Forget-It Cookbook, Dawn J. Ranch &

Amount Measure Ingredient -- Preparation Method

2 pounds yellow squash or zucchini -- sliced (about 6 cups)

1/2 medium onion -- chopped

1 cup shredded carrot

1 10.75 oz can cream of mushroom soup

1 cup sour cream

1/4 cup flour

8 ounces seasoned bread crumbs

1/2 cup butter or margarine -- melted

 

Combine squash, onion, carrots, and soup.

 

Mix together sour cream and flour and stir into vegetables.

 

Toss stuffing mix with butter. Spread half in bottom of slow cooker. Add

vegetable mixture. Top with remaining crumbs.

 

Cover and cook on low for 7 to 9 hours.
