Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Crockpot Mediterranean Stew Recipe By : ReddHedd@aol Serving Size : 4 Preparation Time: 0:00 Amount Measurement Ingredient Preparation Method 1 eggplant chopped 2 zucchini chopped 1 red or green bell pepper seeded/chopped 1 onion chopped 3 large tomatoes chopped 2 14-oz. cans garbanzo beans drained/rinsed 14 oz. can artichoke hearts packed in water drained/quartered 1 Tbsp oregano Freshly ground black pepper Salt Crushed red pepper flakes to taste/opt 1 pkg egg noodles cooked Add all ingredients except for noodles to the crock pot and stir well. (Sometimes I also add a Tbsp. of tomato paste for a thicker stew.) Cook on low for 8 hours. Serve over the cooked noodles. Natures Bounty: Is a diverse group of chefs, cooks, and gardeners.
