Scandinavian Fruit Soup

Amount Measure Ingredient -- Preparation Method

1 cup dried apricots

1 cup dried sliced apples

1 cup dried pitted prunes

1 cup canned pitted red cherries

1/2 cup quick-cooking tapioca

1 cup grape juice or red wine

3 cups water -- (or more)

1/2 cup orange juice

1/4 cup lemon juice

1 tablespoon grated orange peel

1/2 cup brown sugar

 

Combine apricots, apples, prunes, cherries, tapioca, and grape juice in slow

cooker. Cover with water. Cook on low for at least 8 hours.

 

Before serving, stir in remaining ingredients.

 

Serve warm or cold as a soup or dessert. Delicious served over vanilla ice

cream or frozen yogurt.
