Risi Bisi (Peas and Rice)

1 1/2 cups uncooked converted long-grain white rice

3/4 cup chopped onions

2 cloves garlic

2 14.5 oz cans vegetable broth

1/3 cup water

3/4 teaspoon Italian seasoning

1/2 teaspoon dried basil

1/2 cup frozen baby peas -- thawed

1/4 cup grated Parmesan cheese

 

Combine rice, onions, and garlic in slow cooker.

 

In saucepan, mix together broth and water. Bring to a boil. Add Italian

seasoning and basil. Stir into rice mixture. Cover and cook on low for 2 to 3

hours or until liquid is absorbed.

 

Stir in peas. Cover and cook 30 minutes. Stir in cheese.
