Potatoes O'Brien

Amount Measure Ingredient -- Preparation Method

1 32 oz package shredded potatoes

1/4 cup chopped onions

1/4 cup chopped green pepper

2 tablespoons chopped pimientos -- optional

3/4 teaspoon salt

1/4 teaspoon pepper

3 tablespoons butter

3 tablespoons flour

1/2 cup milk

1 10.75 oz can cream of mushroom soup

1 cup shredded cheddar cheese -- divided

 

Place potatoes, onions, green peppers, and pimientos in slow cooker. Sprinkle

with salt and pepper.

 

Melt butter in saucepan. Stir in flour; then add half of milk. Stir rapidly to

remove all lumps. Stir in remaining milk. Stir in mushroom soup and 1/2 cup of

cheese. Pour over potatoes.

 

Cover and cook on low for 4 to 5 hours. Sprinkle remaining cheese on top about

1/2 hour before serving.
