Julia's Broccoli and Cauliflower with Cheese

5 cups raw broccoli and cauliflower

1/4 cup water

2 tablespoons butter or margarine

2 tablespoons flour

1/2 teaspoon salt

1 cup milk

1 cup shredded cheddar cheese

 

Cook broccoli and cauliflower in saucepan in water until just crispy-tender.

Set aside.

 

Make white sauce by melting butter in another pan over low heat. Blend in flour

and salt. Add milk all at once. Cook quickly, stirring constantly until

mixture thickens and bubbles. Add cheese. Stir until melted and smooth.

 

Combine vegetables and sauce in slow cooker. Mix well. Cook on low for 1 1/2

hours.

 

VARIATION:

 

Substitute green beans and carrots or other vegetables for the broccoli and

cauliflower.
