Italian Vegetable Pasta Sauce (Fix-It and Forget-It)

Amount Measure Ingredient -- Preparation Method

3 tablespoons olive oil

1 cup packed chopped fresh parsley

3 ribs celery

1 medium onion -- chopped

2 cloves garlic -- minced

1 2-inch sprig fresh rosemary or 1/2 tsp. dried rosemary

2 small fresh sage leaves or 1/2 tsp. dried sage

1 32 oz can tomato sauce

1 32 oz can chopped tomatoes

1 small dried hot chile pepper

1/4 pound fresh mushrooms -- sliced

OR 1 8 oz can sliced mushrooms, drained

1 1/2 teaspoons salt

 

Heat oil in skillet. Add parsley, celery, onion, garlic, rosemary, and sage.

Saute until vegetables are tender. Place in slow cooker. Add tomatoes, chile

pepper, mushrooms, and salt. Cover and cook on low for 12 to 18 hours or on

high for 5 to 6 hours.

 

KAREN'S VARIATION:

 

If desired, add 1 12-oz package of browned " recipe crumbles " to olive oil and

sauteed vegetables. Continue with recipe.
