Green Rice Casserole

Amount Measure Ingredient -- Preparation Method

1 1/3 cups evaporated milk

2 tablespoons vegetable oil

3 eggs

1/4 small onion -- minced

1/2 carrot -- minced (optional)

2 cups minced fresh parsley OR 1 10-oz pkg frozen

chopped spinach, thawed & drained

2 teaspoons salt

1/4 teaspoon pepper

1 cup shredded sharp cheddar cheese

3 cups cooked long-grain white rice

 

Beat together milk, oil, and eggs until well-combined. Stir in remaining

ingredients. Mix well. Pour into greased slow cooker. Cover and cook on high

for 1 hour. Reduce heat to low and cook 4 to 6 hours.
