Guest guest Posted June 5, 2001 Report Share Posted June 5, 2001 http://southernfood.about.com/food/southernfood/library/cprec/bl113_11.htm Mexican Pinto Beans 1 small bag of dry pinto beans bacon onion cilantro small jar of salsa Rinse bag of beans and soak overnight. Next day put in crockpot covered with water, almost to the top, and cook on medium heat 5-6 hours. After about 5 hours, fry up desired amount of bacon, onion and cilantro till bacon is cooked through and onion is clear. Add to beans, along with drippings from bacon. Then add salsa to taste. Cook about 1 to 2 more hours. So yummy, I always make 2 crockpots to share with my brother. This could be a main meal with some Spanish rice added. Shared by Marie M. Happy Cooking!
