Chili

 

1 kilo dry kidney beans (about 6 c.)

1 c. dried onion

water

2 (12 oz.) cans, tomato paste

2 tsp. chili powder (or to taste)

 

Put the beans and onion in a large pot. Add water to cover, plus about an

inch. Let soak 8-12 hours. (Or...bring to a boil, then soak 1-2

hours.) Bring back to a boil, and cook until soft (every batch of beans is

different, but mine usually take about 45 minutes). Add tomato paste and

chili powder, tasting to get it as hot as you want it. Heat through and serve.

Amount Measure Ingredient -- Preparation Method

2 quarts whole or diced tomatoes -- undrained

6 ounces tomato paste

1/2 cup chopped onions

1/2 cup chopped celery

1/2 cup chopped green pepper

2 cloves garlic -- minced

1 teaspoon salt

1 1/2 teaspoons ground cumin

1 teaspoon ground oregano

1/4 teaspoon cayenne pepper

3 tablespoons brown sugar

1 15 oz can garbanzo beans

 

Combine all ingredients except beans in slow cooker.

 

Cook on low for 6 to 8 hours or on high for 3 to 4 hours. Add beans one hour

before serving.

 

If you prefer a less tomatoey taste, substitute 2 vegetable bouillon cubes and 1

cup of water for the tomato paste.
