Vegetarian Minestrone Soup

Amount Measure Ingredient -- Preparation Method

6 cups vegetable broth

2 carrots -- chopped

2 large onions -- chopped

3 ribs celery -- chopped

2 cloves garlic -- minced

1 small zucchini -- cubed

1 handful kale -- chopped

1/2 cup barley

1 16 oz can chickpeas or white kidney beans -- drained

1 tablespoon parsley

1/2 teaspoon dried thyme

1 teaspoon dried oregano

1 28 oz can crushed Italian tomatoes

1 teaspoon salt

1/4 teaspoon pepper

grated cheese

 

Combine all ingredients except cheese in slow cooker. Cover and cook on low for

6 to 8 hours or until vegetables are tender.

 

Sprinkle individual servings with grated cheese.
