Ranck & Phyllis Pellman Good Serving Size : 6 Preparation Time :0:00 Categories : Fix-It and Forget-It Cookbook Vegan Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 32 ounces baby carrots 1/2 cup packed brown sugar 1/2 cup orange juice 3 tablespoons butter or margarine 3/4 teaspoon cinnamon 1/4 teaspoon nutmeg 2 tablespoons cornstarch 1/4 cup water Combine all ingredients except cornstarch and water in slow cooker. Cover and cook on low for 3 to 4 hours or until carrots are tender. Put carrots in serving dish and keep warm, reserving cooking juices. Put reserved juices in small saucepan. Bring to a boil. Mix cornstarch and water in small bowl until well blended. Add to juices. Boil one minutes or until thickened, stirring constantly. Pour over carrots and serve.
