Old-Fashioned Gingerbread

Amount Measure Ingredient -- Preparation Method

1/2 cup butter -- softened

1/2 cup sugar

1 egg

1 cup light molasses

2 1/2 cups flour

1 1/2 teaspoons baking soda

1 teaspoon ground cinnamon

2 teaspoons ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1 cup hot water

warm applesauce -- optional

whipped cream -- optional

nutmeg -- optional

 

Cream together butter and sugar. Add egg and molasses. Mix well.

 

Stir in flour, baking soda, cinnamon, ginger, cloves, and salt. Mix well. Add

hot water. Beat well.

 

Pour batter into greased and floured 2-pound coffee can.

 

Place can in cooker. Cover top of can with 8 paper towels. Cover cooker and

bake on high 2 1/2 to 3 hours.

 

Serve with applesauce. Top with whipped cream and sprinkle with nutmeg.
