Guest guest Posted May 25, 2001 Report Share Posted May 25, 2001 Tomi's Mung Bean Soup 1 cup mung beans, rinsed & picked over 1/2 cup shredded carrots 1/2 cup chopped onions 2 Tb. minced garlic about 4 cups veggie broth 1 jalapeno, seeded & minced 1 hungarian hot wax pepper, chopped 1/4 cup mild green chiles, chopped couple shakes of soy sauce or braggs liquid aminos 1 tsp. curry 1/4 tsp. cumin 1 tsp. smoked bittersweet paprika 1 tsp. mexican oregano or 2 tsp. oregano 1/4 cup chopped cilantro Place all ingredients in crockpot and simmer all day!!! If you like this is nice served over cooked millet or couscous. You might have to add more broth so check halfway through cooking to see how the soup is coming along. I have never written this recipe down before so this is all from memory and I'm sad to say that in my cooking I never take the time to measure.
