Ranck & Phyllis Pellman Good Serving Size : 8 Preparation Time :0:00 Categories : Fix-It and Forget-It Cookbook Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 medium carrots -- halved & thinly sliced 2 ribs celery -- thinly sliced 1 medium onion -- chopped 4 cloves garlic -- minced 1 20 oz can black beans -- drained & rinsed 2 14.5 oz cans vegetable broth 1 15 oz can crushed tomatoes 1 1/2 teaspoons dried basil 1/2 teaspoon dried oregano 1/2 teaspoon ground cumin 1/2 teaspoon chili powder 1/2 teaspoon hot pepper sauce Combine all ingredients in slow cooker. Cover and cook on low for 9 to 10 hours. May be served over cooked rice. VARIATION: If you prefer a thicker soup, use only 1 can of broth.
