Grace's Minestrone Soup

Amount Measure Ingredient -- Preparation Method

3/4 cup dry elbow macaroni

2 quarts vegetable broth or vegetarian " chicken "

broth

2 large onions -- diced

2 carrots -- slices

1/2 head cabbage -- shredded

1/2 cup celery -- diced

1 16 oz can tomatoes

1/2 teaspoon salt

1 teaspoon dried oregano

1 tablespoon minced parsley

1/4 cup frozen corn

1/4 cup frozen peas

1/4 cup frozen lima beans

1/4 teaspoon pepper

grated Parmesan or Romano cheese

 

Cook macaroni according to package directions. Set aside.

 

Combine all ingredients except macaroni and Parmesan cheese in large slow

cooker. Cover and cook on low for 8 hours. Add macaroni during the last 30

minutes of cooking time.

 

Garnish individual servings with cheese.
