Egg and Broccoli Casserole

Amount Measure Ingredient -- Preparation Method

1 24 oz carton small-curd cottage cheese

1 10 oz package frozen chopped broccoli -- thawed & drained

2 cups shredded Cheddar cheese

6 eggs -- beaten

1/3 cup flour

1/4 cup melted butter or margarine

3 tablespoons finely chopped onion

1/2 teaspoon salt

shredded cheese -- optional

 

Combine first 8 ingredients. Pour into greased slow cooker. Cover and cook on

high for 1 hour. Stir. Reduce heat to low. Cover and cook 2 1/2 to 3 hours or

until temperature reaches 160ºF and eggs are set. Sprinkle with cheese and

serve.
