Guest guest Posted May 20, 2001 Report Share Posted May 20, 2001 Cohutta Sweet Potao Bake Makes 8 servings 8 med. sweet potatoes 1/4 cup brown sugar 1/4 cup honey 1 tsp. cornstarch 1/2 cup pineapple juice 1/2 tsp. cinnamon 1/4 tsp. nutmeg 2 tsp. orange rind 2 tsp. margarine 1/4 cup chopped walnuts Cook sweet potatoes until tender. Poke with fork to check. Peel and cut into 1/2 " slices. Arrange slices in a lightly greased 12x8x2-inch baking dish. Set aside. Combine brown sugar and next 7 ingredients in a saucepan. Cook over med. heat, stirring constantly until mixture begins to boil. Boil 1 min., stirring constantly until mixture is thick and bubbly. Pour over sweet potatoes, sprinkle with nuts. Cover and refrigerate 8 hrs. Remove dish from refrigerator and let stand 30 min. Uncover and bake at 350* for 30 min. or until thoroughly heated.
