I altered a recipe from " Quick Cooking " magazine, to make it vegetarian. It's filling, tasty and great for a football crowd! Even the die-hard meat-eaters in the crowd liked it. Enjoy! Diana ;D ~Wild Rice & Mushroom Crockpot Dish~ 2 & 3/4 Cups water 1 can (10 1/2 oz) Vegetable Broth 1 8 oz container fresh mushrooms, chopped up 1 envelope dry Onion Soup mix (make sure it doesn't have beef in it...any vegetarian dry soup mix will work...it's just for flavoring...add your favorite.) 1/4 cup margarine, melted 1 Cup uncooked white or brown rice 1 Cup uncooked Wild Rice (pricey, but well worth it!) Mix it all in the crockpot, and set it on HIGH for 4 hours, or LOW for 8 hours. I stirred it a few times, to get the mushrooms mixed in well (they tended to float), and left the cover off for the last 1/2 hour or so, as it was still a little moist.
