Anyone have a recipe for a standard veg-heavy minestrone soup?

I'm looking for a crockpot recipe for a minestrone soup that is heavy on

vegetables. I say that because I often have a hard time getting enough

vegetables in a day and I know minestrone is a good way to do this. When I

think of this, I picture the soup like you get at Olive Garden. Spinach,

zuccini and many other vegetables along with a little pasta and some kidney

beans. I'm really wanting to make something like this for next week. Any

ideas?
