Potato " Pepperoni " Pizza Pot

9 cups shredded loose-packed frozen potatoes

1/2 cup finely chopped onion

1 2.5 oz jar sliced mushrooms -- drained

3/4 cup shredded reduced-fat mozzarella cheese

3/4 cup shredded reduced-fat Cheddar cheese

6 ounces vegetarian " pepperoni " slices

1 1/2 teaspoons Italian seasoning

8 ounces tomato sauce or pizza sauce

 

Spray a slow cooker container with olive-oil-flavored cooking spray. In

prepared container, combine potatoes, onion, and mushrooms. Add mozzarella

cheese, Cheddar cheese, and veggie pepperoni. Mix well to combine. Stir

Italian seasoning into tomato sauce (you can omit Italian seasoning if you use

pizza sauce). Evenly spoon sauce mixture over top. Cover and cook on low for 6

to 8 hours. Mix gently before serving.
