Stir in water and vanilla extract. Cover and cook on low for 3 to 4 hours. Mix well with a wire whisk before serving. VARIATIONS: Spiced Cocoa: Add 1 1/2 teaspoons of apple pie spice before adding water. Mocha Cocoa: Add 2 tablespoons dry instant coffee crystals before adding water.
