Olé Scalloped Corn

Amount Measure Ingredient -- Preparation Method

1 8 oz can cream-style corn

1/2 cup frozen whole kernel corn -- thawed

1/4 cup nonfat sour cream

1 egg or equivalent egg substitute -- slightly beaten

1 cup chopped onion

1/2 cup chopped green bell pepper

1 2 oz jar pimientos -- undrained

21 small fat free saltine crackers -- made into crumbs

1 teaspoon dried parsley

1/8 teaspoon black pepper

 

Spray a slow cooker container with olive oil-flavored cooking spray. In

prepared container, combine corn, sour cream, and egg. Stir in onion, green

pepper, undrained pimiento, and cracker crumbs. Add parsley flakes and black

pepper. Mix well to combine. Cover and cook on low for 3 to 4 hours. Mix well

before serving.
