Guest guest Posted May 4, 2001 Report Share Posted May 4, 2001 Candied Pineapple Yams Makes 10 servings 5 lbs. yams or sweet potatoes, washed and pierced with a fork 1/2 cup pineapple juice 3/4 cup margarine, melted 1/2 tsp. salt 1/2 tsp. pumpkin pie spice 1/2 cup packed brown sugar 1 container (16 oz.) Dole fresh pineapple cut into slices Place yams on foil-lined baking sheet. Bake at 350* for 90 min. or until yams are tender when pricked with a fork. Spoon out baked yams from skins and place into large mixing bowl. Add pineapple juice, margarine, salt and pumpkin pie spice. Beat until fluffy. Spoon mixture into lightly greased 13x9-inch baking dish. Sprinkle with brown ssugar. Arrange pineapple slices over yams. Continue baking at 350* 15 min. or until hot.
