Guest guest Posted April 30, 2001 Report Share Posted April 30, 2001 Stuffed Honeyed Sweet Potatoes Makes 5-6 servings 5 to 6 sweet potatoes 1/2 cup soft butter 1/4 cup light cream 2 tbsp. honey 2 tbsp. dark rum 1/2 tsp. cardamon 1/4 tsp. salt 2 tbsp. chopped walnuts Wash potatoes; drain excess water. Place damp potatoes in slow cooker. Cover and cook on LOW 5-6 hrs. or until done. Cut off the top third of each potato lengthwise and scoop out leaving a 1/4 " shell. Mash potato pulp with butter, cream, honey, rum, cardamom, and salt. Return mixture to shell. Top with walnuts. Arrange on shallow baking sheet. Bake in 425* oven for 15 min.
