I don't have any veg crock pot recipes, which is why I have joined your list. I'm not even vegetarian, I'm just looking to eat more healthy. I do have a fav veg recipe not for the crock pot. It's a Risotto, and I firmly believe Risotto should be stirred constantly, and there for not suited for the crock pot. If anyone is interested in this recipe, I will gladly share it off list.
