Guest guest Posted April 26, 2001 Report Share Posted April 26, 2001 http://www.hungrymonster.com/recipe/recipe-search.cfm?Course_vch=Crockpot & tt l=1 & Recipe_id_int=27010 Vegetable Pasta For Crock-Pot Course : Crockpot Serves: 6 Ingredients: Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Tbsp Butter Or Margarine 1 Ea Zucchini -- 1/4 " slice 1 Ea Yellow Squash -- 1/4 " slice 2 Ea Carrots -- thinly sliced 1 1/2 C Mushrooms -- fresh, sliced 1 Pkg Broccoli, Frozen -- cuts 4 Ea Green Onions -- sliced 1 Cl Garlic -- minced 1/2 Tsp Basil -- dried 1/4 Tsp Salt 1/2 Tsp Pepper 1 C Parmesan Cheese -- grated 12 Oz Fettuccini 1 C Mozzarella Cheese -- shredded 1 C Cream 2 Ea Egg Yolks Preparation: Rub crock wall with butter. Put zucchini, yellow squash, carrots, mushrooms, broccoli, onions, garlic, seasonings and parmesan in the crock-pot. Cover; cook on High 2 hours. Cook fettuccini according to package directions; drain. Add cooked fettuccini, mozzarella, cream and egg yolks. Stir to blend well. Allow to heat for 15 to 30 minutes.
