Broccoli Rice Melange

1 cup uncooked instant rice

4 cups frozen chopped broccoli -- thawed

1/2 cup chopped onion

1 12 oz can evaporated skim milk

1 10.75 oz can Healthy Request Cream of Mushroom Soup

1 cup shredded reduced-fat Cheddar cheese PLUS 2

tablespoons

 

Spray a slow cooker container with butter-flavored cooking spray. In prepared

container, combine uncooked rice, broccoli, and onion. Add evaporated skim milk

and mushroom soup. Mix well to combine. Stir in Cheddar cheese. Cover and

cook on low for 5 to 6 hours. Mix well before serving.

 

HINT: Thaw broccoli by placing it in a colander and rinsing it under hot water

for one minute.
