Okay -- I'm ready to start posting from the next book now, A Potful of Recipes

by Joanna Lund. These are all low fat/low cal (no sugar either) recipes. They

are also much simpler than the Slow Cooker Cooking cookbook -- I'd call that one

more " gourmet slow cooker " . :-)

 

I think I'll just start posting these in alphabetical order (a few a day). I'll

be able to remember better what I've posted that way (I think).

Apple Pie Bread Pudding

Amount Measure Ingredient -- Preparation Method

12 slices white bread -- torn into medium size pieces

3 1/2 cups cored, peeled & chopped cooking apples -- 1/2 " cubes

1 cup unsweetened apple juice

1/2 cup Diet Mountain Dew

1/2 cup Splenda or Sugar Twin

1 1/2 teaspoons apple pie spice

 

Spray a slow cooker container with butter-flavored cooking spray. In prepared

container, combine bread pieces and apples. In a small bowl, combine apple

juice, Diet Mountain Dew, Splenda and apple pie spice. Drizzle juice mixture

evenly over bread mixture. Mix gently to combine. Cover and cook on low for 6

hours. Mix well before serving.
