Rice Pudding with Raisins

1 cup raw white arborio rice

6 cups whole milk

1 14 oz can sweetened condensed milk

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup raisins

 

Place the rice in the insert of the slow cooker.

 

Combine the whole milk, sweetened condensed milk, vanilla, cinnamon, and salt in

a medium saucepan. Stir together to mix well, and then set the pan over medium

high heat. Heat the mixture until it almost simmers, stirring frequently and

making sure to reach into the corners of the saucepan, about 10 minutes. Pour

the mixture over the rice, stir well, and cook, covered on low for 3 hours.

Quickly uncover the cooker and stir in the raisins. Continue to cook the

pudding, covered, for 2 more hours.

 

Turn off the slow cooker and let the pudding sit, covered, for 30 minutes. The

finished pudding will be creamy and soft with no " bite " left to the rice.
