Guest guest Posted April 18, 2001 Report Share Posted April 18, 2001 Broccoli, Corn, Cheese Casserole Ingredients 5 cups chopped fresh broccoli flowerets 2 tablespoons water 1 (24 ounce) package cottage cheese 4 eggs 1/4 cup melted butter 1/3 cup all-purpose flour 1 (11 ounce) can whole kernel corn, drained 2 cups shredded Cheddar cheese 1/4 cup finely chopped onion 1/2 teaspoon salt 1/4 teaspoon ground black pepper breadcrumbs to cover Instructions Place broccoli in a vented covered dish; add water. Cook 4 minutes in microwave or until tender on top of stove. Drain; set aside. Combine cottage cheese, eggs, butter and flour in container of a blender; process until smooth. Set aside. Combine broccoli, corn, cheese, onion, salt and pepper in a large bowl. Stir in cottage cheese mixture. Spoon into lightly greased crockpot. Sprinkle bread crumbs to cover casserole.
