Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 cups Triple Applesauce (Slow Cooker Cooking) -- (page 19)

well chilled

1/4 cup Calvados or apple brandy -- optional

If you are using an ice cream maker, place the applesauce in the container and

freeze according to manufacturer's instructions. Otherwise, place a shall

metal pan with at least a 5-cup capacity in the freezer 1 hour before you plan

to make the granita. Place the applesauce in the chilled pan, cover it with

aluminum foil, and return it to the freezer. Stir the mixture every 20 to 30

minutes with a fork, returning the covered pan to the freezer each time, until

the granita is " soft " (frozen slightly slushy), with coarse crystals of ice.

This will probably take 2 to 4 hours.

To serve the frozen granita, spoon it into small cups and add a splash of

Calvados, if desired, to each serving.
