Cover and cook on low for 5 to 6 hours or on high for 3 hours until the apples are very tender. Discard the cinnamon stick and use a slotted spoon to transfer the apple solids to a food mill or a food processor. Puree them, and add enough cooking juices to achieve the desired consistency. Serve the applesauce warm or cold by itself or as an accompaniment to other dishes. NOTE: If you are using a food processor to puree the fruit, core and seed the apples before you cook them.
