Prunes in Armagnac

1 pound jumbo pitted prunes

finely grated zest of 1 large lemon

1 cup Armagnac

1/2 cup freshly squeezed and strained orange juice

 

Place the prunes, lemon zest, Armagnac, and orange juice in the insert of a slow

cooker. Cover and cook on low for 8 hours or on high for 6 hours, until most of

the liquid is absorbed and the prunes are very soft.

 

Store in the refrigerator in a tightly sealed container for up to 3 months.

NOTES : This is a classic French recipe that can be used as a garnish for

dishes.

My very favorite application, however, is to use these prunes to make what

has to be the world's most sensuous, seductive, non-chocolate dessert,

Prunes in a Pitcher (page 176). Armagnac, like cognac, gets its color and

flavor from being aged in oak. I love to eat this as is or on top of hot

oatmeal, or spoon some on top of a broiled grapefruit half.
