Guest guest Posted April 16, 2001 Report Share Posted April 16, 2001 * Exported from MasterCook * Pear Crumble Recipe By :Slow Cooker Cooking, Lora Brody Serving Size : 6 Preparation Time :0:00 Categories : Desserts Fruits Slow Cooker Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Bosc pears -- rinsed, cored & cut into 1 " cubes 1 cup dried pears -- (packed cup) coarsely chopped 3/4 cup golden raisins 1 1/2 cups packed dark brown sugar 1/2 cup honey 3/4 cup all-purpose flour 3/4 cup rolled oats -- old-fashioned or quick cooking (not instant) 8 tablespoons chilled butter -- cut into small pieces 1 pint best-quality store-bought vanilla ice cream or The World's Best Vanilla Ice Cream (pg 171) Place the fresh and dried pears, raisins, 1/2 cup of the brown sugar, and the honey in the insert of the slow cooker. Stir well, cover, and cook on high for 3 1/2 hours or until the fruit is soft. Turn off the slow cooker and carefully remove the insert from the base. Place a mesh strainer or colander over a saute pan and pour in the contents of the insert. Return the fruit to the insert, leaving the juice in the saute pan. Bring the cooking juice to a boil over high heat. Cook, stirring, until the juice becomes thick and syrupy and begins to caramelize. Remove from the heat. Preheat the oven to 350ºF with a rack at the center position. Put the flour, oats, and remaining 1 cup of brown sugar in a medium mixing bowl. Stir with a fork to combine. Use your fingers to work in the butter until the mixture resembles coarse meal. Distribute the topping over the pear mixture in the insert. Bake for 30 minutes until the fruit is bubbling and the topping is golden brown. Serve in bowls topping with a scoop of vanilla ice cream. Drizzle some of the hot reduced cooking juices over the ice cream.
