Blueberry Conserve

Amount Measure Ingredient -- Preparation Method

2 quarts fresh blueberries -- rinsed & picked over

4 tablespoons quick-cooking tapioca

1 cup granulated sugar

grated zest and strained juice of 1 lemon

 

Place the berries, tapioca, sugar, and lemon zest and juice in the insert of the

slow cooker, and stir together to mix. Cover and cook on high for 30 minutes

and then stir again. Cover and continue to cook for another 1 1/2 hours.

 

Turn the slow cooker off, leave it covered, and allow the conserve to cool to

room temperature. Store in covered sterilized containers in the refrigerator.
