Guest guest Posted April 14, 2001 Report Share Posted April 14, 2001 * Exported from MasterCook * Rum-Croissant Bread Pudding with Fantasy Cherry Sauce Recipe By :Slow Cooker Cooking, Lora Brody Serving Size : 8 Preparation Time :0:00 Categories : Puddings & Custards Slow Cooker Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons unsalted butter -- softened 2 cups whole milk 2 cups heavy cream 4 extra large eggs 1/2 cup packed dark brown sugar 1/3 cup rum 1 1/2 teaspoons pure vanilla extract 1/2 cup pecan halves 5 large plain stale croissants -- cut lengthwise into thirds FANTASY CHERRY SAUCE: 2 cups packed dried pitted Bing or other sweet cherries 3 cups orange juice 1/3 cup kirsch Use the softened butter to generously coat the inside of the insert of the slow cooker. In a large bowl, combine the milk, cream, eggs, dark brown sugar, rum, vanilla, and pecans. Stir well to mix. Divide the croissant pieces into 4 portions. Overlap one portion in the bottom of the insert. Pour in one third of the milk mixture. Add anther overlapping layer of croissant pieces, then pour in one-half of the remaining milk mixture. Make a third layer of croissants, and then pour in the remaining milk mixture. Layer the last portion of croissants on top. Cover the slow cooker and cook on high for 1 hour and then reduce the heat to low and cook until the custard is set and an instant-read thermometer inserted in the center of the pudding registers 190ºF, about 3 hours. Serve hot or at room temperature with Fantasy Cherry Sauce. FANTASY CHERRY SAUCE: Place the cherries, orange juice, and kirsch in a large saucepan. Bring to a boil over medium-high heat and simmer, uncovered, for 10 minutes. Let the sauce cool in the pan. Serve hot, warm, or at room temperature. Store in a tightly covered container in the refrigerator for up to 6 months.
