Guest guest Posted April 14, 2001 Report Share Posted April 14, 2001 * Exported from MasterCook * Deux Pears Poached in Champagne Recipe By :Slow Cooker Cooking, Lora Brody Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruits Slow Cooker Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 underripe unblemished whole Comice or Anjou pears -- with stems attached 8 whole dried pears -- halved lengthwise finely grated zest and strained juice of 1 large lemon 3 cups Champagne -- plus more if needed 1 cup granulated sugar Working from the bottom of each pear, use a sharp paring knife or grapefruit spoon to dig out the core and seeds. Peel the pears, leaving the stems in place. Set aside. Use the dried pear halves to line the bottom of the insert of the slow cooker. Place the whole pears, standing upright, on top. In a medium bowl, stir together the lemon zest and juice, Champagne, and sugar. Pour this mixture over the pears, making sure the liquid comes at least halfway up the sides of the pears. Pour in more Champagne if necessary. Cover and cook on high for 3 to 4 hours, or until the fresh and dried pears are tender when pierced with the tip of a sharp knife. Turn off the slow cooker and allow the pears to cool in the syrup. To serve, place a pear in each of 4 rimmed plates or shallow bowls. Add 1 or 2 pieces of dried pear, and spoon on some syrup.
