Garlic Smashed Potatoes

5 large cloves Caramelized Garlic (pg 40) or 4 large

garlic cloves peeled, minced & sauteed in

3 tbsp olive oil until translucent

3 pounds fingerling potatoes -- scrubbed & halved

1 large onion -- peeled & minced

2 cups vegetable broth or Vegetable Stock (pg 9) -- plus more,

if needed, to cover the potatoes

1 stick butter -- softened

1/2 cup heavy cream -- optional

salt & freshly ground black pepper

3 tablespoons garlic flavored oil from Caramelized

Garlic (pg 40) -- optional

 

Place the fresh garlic, potatoes, and onions in the insert of the slow cooker.

Pour in enough broth to cover the potatoes. (If they are not covered, they will

darken as they cook.) Cover and cook on high for 4 to 8 hours or until the

potatoes are very soft. Use a ladle to scoop out most of the cooking liquid and

reserve it. If you are going to use it as a lower-calorie option to the heavy

cream when mashing the potatoes.

 

Add the butter and Caramelized Garlic, if using, to the potatoes and use a

hand-held potato masher or a wooden spoon to mash the potatoes. Don't make them

completely smooth; they are supposed to be a little lumpy. As you mash the

potatoes, add heavy cream, if desired, or some of the reserved cooking liquid,

until the right consistency is achieved. Season with salt and pepper to taste

and serve hot. For extra garlic flavor, pass a little garlic-flavored oil to

drizzle on each serving.

1 bulb elephant or 2 bulbs of regular garlic -- intact

olive or vegetable oil

good quality crusty bread -- thickly sliced

 

To prepare the garlic, use a serrated knife to cut off one-fourth of the top of

the bulb, exposing just the tops of the cloves. Place the garlic, cut side up,

in the insert of the slow cooker. Pour in oil to come about one third of the

way up the sides of the garlic bulb. Cover and cook on high for 4 to 6 hours or

until the garlic is very soft when pierced with the point of a sharp knife.

Cool the garlic bulb in the oil.

 

To serve, place the whole bulb in the center of a rimmed plate. Pour some of

the garlic oil around it. Pass the bread. Squeeze the softened cloves of

garlic onto the bread.

 

NOTE: The fragrant garlic oil can be stored in the refrigerator in a tightly

covered container for 1 month. Use it in salad dressings, drizzle it over soup,

pasta, or grilled vegetables.

NOTES : Every trendy restaurant, at one time or another, has set out roasted

garlic along with slices of crusty bread on which to smear it. Using the

oversized elephant garlic gives a milder flavor, but the regular variety is just

as tasty, if a little more pungent. If you are only cooking one bulb, it's best

to use a small (1 quart) slow cooker.
