Guest guest Posted April 9, 2001 Report Share Posted April 9, 2001 Pineapple Sweet Potatoes Makes 12-14 servings 6 to 6 1/2 cups mashed sweet potatoes (without added milk or butter) 4 eggs 1 cup milk 1/4 cup butter or margarine, softened 1 tsp. vanilla extract 1/2 tsp. lemon extract 1 tsp. salt 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1 can (8 oz.) pineapple slices, drained 1/4 cup chopped pecans In a mixing bowl, combine the first 9 ingredients; mix well.
