Barley, Bean, & Veggie Sausage Mish-Mash

 

1 - 10 oz. can pinto beans, rinsed & drained

1 - 4 oz. can mushrooms, rinsed & drained

1 pkg. lightlife veggie italian sausage, sliced

1 - 10 oz. can diced tomatoes w/ green chiles

1 - 8 oz. can no salt tomato sauce

2 Tb. tomato paste

2 C. veggie broth

1 C. barley

1 Tb. maple syrup

1 Tb. minced fresh garlic

1/3 C. frozen chopped onions or fresh

1 generous Tb. italian seasoning

1 tsp. smoked sweet paprika

2 bay leaves

fresh ground pepper

 

Place all ingredients in the crockpot and cook for 10 hours. Stirring

occasionally. Check after a few hours to see if it need more liquid.

Depending on the barley you might need to add a little more. You can

either add broth or a 4- oz. tomato sauce.

 

I came up with this recipe last evening and my husband absolutely

loved it. I would recommend serving with fresh hot cornbread or those

grands corn biscuits and maple syrup. I know the grands are

cheating!! But boy are they good. If you haven't tried those grands

corn biscuits by Pillsbury you should. Their delicious, fast, and

easy.
